Ratatouille (Vegetable Stew)
A classic French dish, Ratatouille is a vibrant and flavorful medley of thinly sliced vegetables cooked with a light tomato sauce.

- 1 zucchini thinly sliced
- 1 eggplant thinly sliced
- 2 tomatoes thinly sliced
- 1 bell pepper thinly sliced
- 1/2 cup tomato sauce
- 2 tbsp olive oil
- 2 garlic cloves minced
- 1 tsp dried thyme
- Salt and black pepper to taste
Preheat your oven to 180°C (350°F).
Spread the tomato sauce evenly at the bottom of a baking dish. Add minced garlic, salt, and black pepper to the sauce.
Arrange the vegetable slices in an alternating pattern (zucchini, eggplant, tomato, and bell pepper) in a circular or linear pattern in the dish.
Drizzle olive oil over the vegetables and sprinkle dried thyme, salt, and pepper.
Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes to lightly caramelize the vegetables.
Let it cool slightly before serving warm as a side dish or main course.
