Potato and Cheese Croquettes

Ingredients
  

  • 3 medium potatoes peeled and boiled
  • 100 g shredded mozzarella or cheddar cheese
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika optional

For Coating:

  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions
 

  • Mash the boiled potatoes with butter, salt, black pepper, and paprika until smooth. Let the mixture cool slightly.
  • Take a small portion of the potato mixture and flatten it in your palm. Place a small amount of cheese in the center and roll into a ball or cylinder shape, ensuring the cheese is fully enclosed.
  • Roll the croquette in flour, then dip in beaten eggs, and coat with breadcrumbs. Repeat with the remaining mixture.
  • Heat vegetable oil in a deep pan to 180°C (350°F). Fry the croquettes in batches until golden brown and crispy, about 2-3 minutes per batch.
  • Drain on paper towels to remove excess oil.
  • Serve warm with your favorite dipping sauce.
