
Potato and Cheese Croquettes
Golden and crispy croquettes filled with creamy mashed potatoes and melted cheese, perfect as a snack or appetizer.
Ingredients
- 3 medium potatoes peeled and boiled
- 100 g shredded mozzarella or cheddar cheese
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika optional
For Coating:
- 1 cup all-purpose flour
- 2 eggs beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions
- Mash the boiled potatoes with butter, salt, black pepper, and paprika until smooth. Let the mixture cool slightly.
- Take a small portion of the potato mixture and flatten it in your palm. Place a small amount of cheese in the center and roll into a ball or cylinder shape, ensuring the cheese is fully enclosed.
- Roll the croquette in flour, then dip in beaten eggs, and coat with breadcrumbs. Repeat with the remaining mixture.
- Heat vegetable oil in a deep pan to 180°C (350°F). Fry the croquettes in batches until golden brown and crispy, about 2-3 minutes per batch.
- Drain on paper towels to remove excess oil.
- Serve warm with your favorite dipping sauce.
