Ingredients
- 1 cup whole wheat flour
- 1/2 cup cottage cheese
- 1/4 cup honey or maple syrup
- 1/4 cup milk
- 1 egg
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat the oven to 180°C (350°F) and line a muffin tray with paper liners.
- In a large bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg, then add cottage cheese, honey or maple syrup, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
