  • 1 cup whole wheat flour
  • 1/2 cup cottage cheese
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk
  • 1 egg
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 180°C (350°F) and line a muffin tray with paper liners.
  • In a large bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
  • In a separate bowl, beat the egg, then add cottage cheese, honey or maple syrup, milk, and vanilla extract.
