- 1 cup whole wheat flour
- 1/2 cup cottage cheese
- 1/4 cup honey or maple syrup
- 1/4 cup milk
- 1 egg
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Preheat the oven to 180°C (350°F) and line a muffin tray with paper liners.
In a large bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
In a separate bowl, beat the egg, then add cottage cheese, honey or maple syrup, milk, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Divide the batter evenly among the muffin cups.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
