
Walnut, Spinach, and Citrus Salad

Ingredients
- 4 cups fresh spinach leaves
- 1 large orange sliced
- 1 grapefruit sliced
- 1/2 cup toasted walnuts
- 1/4 cup thinly sliced red onion
- 1 tablespoon pumpkin seeds optional
For the Dressing
- 3 tablespoons olive oil
- 1 tablespoon honey
- 2 tablespoons fresh orange juice
- 1 tablespoon lemon juice
- 1 teaspoon mustard
- Salt and black pepper
Instructions
- Place the spinach leaves in a large salad bowl.
- Add the orange and grapefruit slices.
- Sprinkle in the toasted walnuts and thinly sliced red onion.
- For the dressing, whisk together olive oil, honey, orange juice, lemon juice, mustard, salt, and black pepper in a small bowl.
- Drizzle the dressing over the salad and gently toss to combine.
