Walnut, Spinach, and Citrus Salad

- 4 cups fresh spinach leaves
- 1 large orange sliced
- 1 grapefruit sliced
- 1/2 cup toasted walnuts
- 1/4 cup thinly sliced red onion
- 1 tablespoon pumpkin seeds optional
For the Dressing
- 3 tablespoons olive oil
- 1 tablespoon honey
- 2 tablespoons fresh orange juice
- 1 tablespoon lemon juice
- 1 teaspoon mustard
- Salt and black pepper
Place the spinach leaves in a large salad bowl.
Add the orange and grapefruit slices.
Sprinkle in the toasted walnuts and thinly sliced red onion.
For the dressing, whisk together olive oil, honey, orange juice, lemon juice, mustard, salt, and black pepper in a small bowl.
Drizzle the dressing over the salad and gently toss to combine.
Garnish with pumpkin seeds and serve immediately.
