Smoked Salmon and Arugula Salad

Ingredients
  

  • 200 g smoked salmon
  • 4 cups fresh arugula
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup finely sliced red onion
  • 1/2 cup cooked quinoa optional
  • 1 tablespoon capers

For the Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper

Instructions
 

  • Place the arugula in a large salad bowl.
  • Add sliced avocado, cherry tomatoes, red onion, and cooked quinoa.
  • Tear the smoked salmon into smaller pieces and place it over the salad.
  • Sprinkle with capers.
  • For the dressing, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper. Drizzle over the salad.
  • Gently toss and serve immediately.
