Smoked Salmon and Arugula Salad
A light and delicious salad made with smoked salmon, fresh arugula, and citrus flavors.

- 200 g smoked salmon
- 4 cups fresh arugula
- 1 avocado sliced
- 1 cup cherry tomatoes halved
- 1/4 cup finely sliced red onion
- 1/2 cup cooked quinoa optional
- 1 tablespoon capers
For the Dressing
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and black pepper
Place the arugula in a large salad bowl.
Add sliced avocado, cherry tomatoes, red onion, and cooked quinoa.
Tear the smoked salmon into smaller pieces and place it over the salad.
Sprinkle with capers.
For the dressing, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper. Drizzle over the salad.
Gently toss and serve immediately.
