Ingredients
- 200 g whole wheat noodles or rice noodles
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 red bell pepper thinly sliced
- 1 cucumber julienned
- 2 green onions thinly sliced
- 2 tablespoons toasted sesame seeds
- 1/4 cup chopped fresh cilantro
For the Dressing
- 3 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup for vegan option
- 1 clove garlic grated
- 1 teaspoon freshly grated ginger

Instructions
- Cook the noodles according to the package instructions, drain, and rinse under cold water.
- In a large salad bowl, combine shredded red cabbage, carrots, red bell pepper, cucumber, and green onions.
- For the dressing, whisk together sesame oil, soy sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes in a small bowl.
- Toss the noodles and vegetables together with the dressing until evenly coated.
