- 200 g whole wheat noodles or rice noodles
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1 red bell pepper thinly sliced
- 1 cucumber julienned
- 2 green onions thinly sliced
- 2 tablespoons toasted sesame seeds
- 1/4 cup chopped fresh cilantro
For the Dressing
- 3 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup for vegan option
- 1 clove garlic grated
- 1 teaspoon freshly grated ginger
- 1 teaspoon red pepper flakes optional
Cook the noodles according to the package instructions, drain, and rinse under cold water.
In a large salad bowl, combine shredded red cabbage, carrots, red bell pepper, cucumber, and green onions.
For the dressing, whisk together sesame oil, soy sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes in a small bowl.
Toss the noodles and vegetables together with the dressing until evenly coated.
Sprinkle with toasted sesame seeds and fresh cilantro before serving.
