Ingredients
  

  • 200 g whole wheat noodles or rice noodles
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper thinly sliced
  • 1 cucumber julienned
  • 2 green onions thinly sliced
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup chopped fresh cilantro

For the Dressing

  • 3 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 clove garlic grated
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon red pepper flakes optional

Instructions
 

  • Cook the noodles according to the package instructions, drain, and rinse under cold water.
  • In a large salad bowl, combine shredded red cabbage, carrots, red bell pepper, cucumber, and green onions.
  • For the dressing, whisk together sesame oil, soy sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes in a small bowl.
  • Toss the noodles and vegetables together with the dressing until evenly coated.
  • Sprinkle with toasted sesame seeds and fresh cilantro before serving.
