Ingredients
  

  • 4 medium zucchinis spiralized into zoodles
  • 1 cup fresh pesto sauce
  • 1 cup cherry tomatoes halved
  • 2 tablespoons olive oil
  • 1 garlic clove minced
  • 1/4 cup grated Parmesan cheese optional
  • Salt and black pepper

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute.
  • Add the spiralized zucchini noodles and cook for 2-3 minutes until slightly softened. Season with salt and black pepper.
  • Toss the zucchini noodles with pesto sauce until well coated.
  • Add the cherry tomatoes on top and transfer to serving plates.
  • Optionally, sprinkle with grated Parmesan cheese. Serve warm or at room temperature.
