Zucchini Spaghetti (Zoodles) with Pesto and Cherry Tomatoes
Light and flavorful zucchini noodles tossed with fresh pesto sauce and cherry tomatoes.

- 4 medium zucchinis spiralized into zoodles
- 1 cup fresh pesto sauce
- 1 cup cherry tomatoes halved
- 2 tablespoons olive oil
- 1 garlic clove minced
- 1/4 cup grated Parmesan cheese optional
- Salt and black pepper
Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute.
Add the spiralized zucchini noodles and cook for 2-3 minutes until slightly softened. Season with salt and black pepper.
Toss the zucchini noodles with pesto sauce until well coated.
Add the cherry tomatoes on top and transfer to serving plates.
Optionally, sprinkle with grated Parmesan cheese. Serve warm or at room temperature.
