
Veggie-Packed Egg White Frittata
A light and flavorful frittata made with protein-rich egg whites and fresh vegetables.
Ingredients
- 6 egg whites
- 1 cup spinach chopped
- 1/2 cup cherry tomatoes halved
- 1/4 cup red bell pepper diced
- 1/4 cup finely chopped onion
- 1/4 cup shredded low-fat cheese optional
- 1 tablespoon olive oil
- Salt and black pepper
Instructions
- Preheat the oven to 180°C (350°F).
- Heat olive oil in a medium oven-safe skillet and sauté the onion and red bell pepper for 2-3 minutes.
- Add the spinach and cherry tomatoes, and sauté for another 1-2 minutes.
- In a bowl, whisk the egg whites with salt and black pepper.
- Pour the egg whites over the sautéed vegetables, spreading evenly.
- Optionally, sprinkle with shredded cheese.
- Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is set and slightly golden.
- Slice and serve warm.
