cherry tomatoes

red bell pepper
diced

finely chopped onion

shredded low-fat cheese

Salt and black pepper
Instructions
Preheat the oven to 180°C (350°F).
Heat olive oil in a medium oven-safe skillet and sauté the onion and red bell pepper for 2-3 minutes.
Add the spinach and cherry tomatoes, and sauté for another 1-2 minutes.
In a bowl, whisk the egg whites with salt and black pepper.
Pour the egg whites over the sautéed vegetables, spreading evenly.
Optionally, sprinkle with shredded cheese.
Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is set and slightly golden.
Slice and serve warm.
