
Lentil and Arugula Power Bowl
A nutritious bowl packed with protein-rich lentils, fresh arugula, and a flavorful dressing.
Ingredients
- 2 cups cooked green lentils
- 4 cups fresh arugula
- 1/2 cup cherry tomatoes halved
- 1 cucumber diced
- 1/4 cup finely chopped red onion
- 1/4 cup roasted pumpkin seeds
Dressing
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 garlic clove grated
- Salt and black pepper
Instructions
- Cook the lentils and let them cool.
- In a large bowl, combine arugula, cooked lentils, cherry tomatoes, cucumber, red onion, and pumpkin seeds.
- For the dressing, whisk together olive oil, lemon juice, Dijon mustard, grated garlic, salt, and black pepper.
- Pour the dressing over the salad and toss gently.
- Serve immediately.
