Lentil and Arugula Power Bowl

Ingredients
  

  • 2 cups cooked green lentils
  • 4 cups fresh arugula
  • 1/2 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup roasted pumpkin seeds

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove grated
  • Salt and black pepper

Instructions
 

  • Cook the lentils and let them cool.
  • In a large bowl, combine arugula, cooked lentils, cherry tomatoes, cucumber, red onion, and pumpkin seeds.
  • For the dressing, whisk together olive oil, lemon juice, Dijon mustard, grated garlic, salt, and black pepper.
  • Pour the dressing over the salad and toss gently.
  • Serve immediately.
