Lentil and Arugula Power Bowl

- 2 cups cooked green lentils
- 4 cups fresh arugula
- 1/2 cup cherry tomatoes halved
- 1 cucumber diced
- 1/4 cup finely chopped red onion
- 1/4 cup roasted pumpkin seeds
Dressing
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 garlic clove grated
- Salt and black pepper
Cook the lentils and let them cool.
In a large bowl, combine arugula, cooked lentils, cherry tomatoes, cucumber, red onion, and pumpkin seeds.
For the dressing, whisk together olive oil, lemon juice, Dijon mustard, grated garlic, salt, and black pepper.
Pour the dressing over the salad and toss gently.
Serve immediately.
