
Lamb Shanks with Onion and Garlic
Tender lamb shanks slow-cooked with aromatic onions, garlic, and herbs for a rich and flavorful dish.
Ingredients
- 4 lamb shanks
- 2 tablespoons olive oil
- 2 large onions sliced into rings
- 6 garlic cloves whole or crushed
- 1 cup beef stock
- 1/2 cup red wine optional
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and black pepper
Instructions
- Preheat the oven to 180°C (350°F).
- Season the lamb shanks with salt and black pepper.
- In a large cast-iron pot, heat the olive oil and sear the lamb shanks on all sides until golden brown. Remove and set aside.
- In the same pot, sauté the onions and garlic until softened. Add the tomato paste and stir for 1 minute.
- Pour in the beef stock and red wine (if using), and stir in the thyme and rosemary.
- Return the lamb shanks to the pot, ensuring they are coated with the sauce.
- Cover the pot and cook in the preheated oven for 2.5-3 hours, checking occasionally to baste the lamb in the sauce.
- Serve warm with the onion and garlic sauce.
