Lamb Shanks with Onion and Garlic

Ingredients
  

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 2 large onions sliced into rings
  • 6 garlic cloves whole or crushed
  • 1 cup beef stock
  • 1/2 cup red wine optional
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and black pepper

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • Season the lamb shanks with salt and black pepper.
  • In a large cast-iron pot, heat the olive oil and sear the lamb shanks on all sides until golden brown. Remove and set aside.
  • In the same pot, sauté the onions and garlic until softened. Add the tomato paste and stir for 1 minute.
  • Pour in the beef stock and red wine (if using), and stir in the thyme and rosemary.
  • Return the lamb shanks to the pot, ensuring they are coated with the sauce.
  • Cover the pot and cook in the preheated oven for 2.5-3 hours, checking occasionally to baste the lamb in the sauce.
  • Serve warm with the onion and garlic sauce.
