Lamb Shanks with Onion and Garlic

- 4 lamb shanks
- 2 tablespoons olive oil
- 2 large onions sliced into rings
- 6 garlic cloves whole or crushed
- 1 cup beef stock
- 1/2 cup red wine optional
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and black pepper
Preheat the oven to 180°C (350°F).
Season the lamb shanks with salt and black pepper.
In a large cast-iron pot, heat the olive oil and sear the lamb shanks on all sides until golden brown. Remove and set aside.
In the same pot, sauté the onions and garlic until softened. Add the tomato paste and stir for 1 minute.
Pour in the beef stock and red wine (if using), and stir in the thyme and rosemary.
Return the lamb shanks to the pot, ensuring they are coated with the sauce.
Cover the pot and cook in the preheated oven for 2.5-3 hours, checking occasionally to baste the lamb in the sauce.
Serve warm with the onion and garlic sauce.
