
Thai Green Curry Chicken
A flavorful and aromatic Thai dish made with chicken, coconut milk, and green curry paste.
Ingredients
- 400 g chicken breast sliced into strips
- 2 tablespoons green curry paste
- 1 tablespoon olive oil or coconut oil
- 1 cup coconut milk
- 1 cup chicken stock
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 cup fresh green beans
- 1 teaspoon fish sauce
- 1 teaspoon brown sugar
- Juice of 1/2 lime
- Fresh basil and cilantro for garnish
- Cooked jasmine rice for serving
Instructions
- Heat the oil in a large skillet over medium heat and sauté the green curry paste for 1-2 minutes.
- Add the chicken strips and cook for 5 minutes.
- Stir in the coconut milk and chicken stock, bringing to a gentle simmer.
- Add the red and green bell peppers along with the green beans. Cook for 10 minutes.
- Stir in the fish sauce, brown sugar, and lime juice. Mix well.
- Garnish with fresh basil and cilantro, and serve hot with jasmine rice.
