Thai Green Curry Chicken

Ingredients
  

  • 400 g chicken breast sliced into strips
  • 2 tablespoons green curry paste
  • 1 tablespoon olive oil or coconut oil
  • 1 cup coconut milk
  • 1 cup chicken stock
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 cup fresh green beans
  • 1 teaspoon fish sauce
  • 1 teaspoon brown sugar
  • Juice of 1/2 lime
  • Fresh basil and cilantro for garnish
  • Cooked jasmine rice for serving

Instructions
 

  • Heat the oil in a large skillet over medium heat and sauté the green curry paste for 1-2 minutes.
  • Add the chicken strips and cook for 5 minutes.
  • Stir in the coconut milk and chicken stock, bringing to a gentle simmer.
  • Add the red and green bell peppers along with the green beans. Cook for 10 minutes.
  • Stir in the fish sauce, brown sugar, and lime juice. Mix well.
  • Garnish with fresh basil and cilantro, and serve hot with jasmine rice.
