Thai Green Curry Chicken

- 400 g chicken breast sliced into strips
- 2 tablespoons green curry paste
- 1 tablespoon olive oil or coconut oil
- 1 cup coconut milk
- 1 cup chicken stock
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 cup fresh green beans
- 1 teaspoon fish sauce
- 1 teaspoon brown sugar
- Juice of 1/2 lime
- Fresh basil and cilantro for garnish
- Cooked jasmine rice for serving
Heat the oil in a large skillet over medium heat and sauté the green curry paste for 1-2 minutes.
Add the chicken strips and cook for 5 minutes.
Stir in the coconut milk and chicken stock, bringing to a gentle simmer.
Add the red and green bell peppers along with the green beans. Cook for 10 minutes.
Stir in the fish sauce, brown sugar, and lime juice. Mix well.
Garnish with fresh basil and cilantro, and serve hot with jasmine rice.
