Ingredients
- 6 large eggs
- 4 large tomatoes, grated or chopped
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh oregano or basil, for garnish (optional)
Instructions
- In a pan over medium heat, warm the olive oil, add the grated or chopped tomatoes, and cook for about 5 minutes until most of the liquid evaporates.
- Add the eggs to the pan and stir slowly, combining them with the tomatoes.
- Stir in the crumbled feta cheese, season with salt and pepper, and cook until the eggs are fully set.
- Garnish with fresh oregano or basil and serve hot.
