- 4 large tomatoes, grated or chopped
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh oregano or basil, for garnish (optional)
In a pan over medium heat, warm the olive oil, add the grated or chopped tomatoes, and cook for about 5 minutes until most of the liquid evaporates.
Add the eggs to the pan and stir slowly, combining them with the tomatoes.
Stir in the crumbled feta cheese, season with salt and pepper, and cook until the eggs are fully set.
Garnish with fresh oregano or basil and serve hot.
