Ingredients
  

  • 2 medium potatoes diced into small cubes
  • 1 cup sucuk Turkish sausage, sliced or diced
  • 4 large eggs
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

  • Heat the olive oil or butter in a skillet over medium heat. Add the potatoes and cook until tender and golden, about 10 minutes.
  • Once the potatoes are cooked, add the sliced sucuk to the skillet and cook for a few minutes until browned.
  • Crack the eggs into the skillet, season with salt and pepper, and cook to your desired doneness. You can scramble the eggs lightly or leave them whole.
