Eggs with Sucuk and Potatoes

- 2 medium potatoes diced into small cubes
- 1 cup sucuk Turkish sausage, sliced or diced
- 4 large eggs
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Heat the olive oil or butter in a skillet over medium heat. Add the potatoes and cook until tender and golden, about 10 minutes.
Once the potatoes are cooked, add the sliced sucuk to the skillet and cook for a few minutes until browned.
Crack the eggs into the skillet, season with salt and pepper, and cook to your desired doneness. You can scramble the eggs lightly or leave them whole.
Remove the skillet from the heat once the eggs are cooked to your liking.
Garnish with fresh parsley if desired and serve hot.
