
Vegan Zucchini Fritters
Crispy and savory zucchini fritters made without eggs, perfect for a healthy snack or side dish.
Ingredients
- 2 medium zucchinis grated
- 1/2 cup chickpea flour
- 1/4 cup nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley chopped
- 2 tbsp olive oil for frying
Instructions
- Grate the zucchinis and squeeze out any excess moisture using a clean towel or cheesecloth.
- In a large bowl, combine the grated zucchini, chickpea flour, nutritional yeast, garlic powder, onion powder, salt, black pepper, and chopped parsley.
- Mix everything until well combined.
- Heat olive oil in a frying pan over medium heat.
- Scoop spoonfuls of the zucchini mixture into the pan and flatten with the back of the spoon to form fritters.
- Fry for 2-3 minutes on each side or until golden and crispy.
- Serve hot as a snack or side dish.
