
Vegan Walnut and Vegetable Meatballs
Flavorful and hearty meatballs made with walnuts, vegetables, and spices, perfect for a healthy snack or meal.
Ingredients
- 1 cup walnuts finely chopped
- 1 cup mixed vegetables carrot, zucchini, bell pepper, grated or finely chopped
- 1/2 cup breadcrumbs use gluten-free if needed
- 1/4 cup chickpea flour
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper to taste
- Fresh parsley for garnish optional
Instructions
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a large mixing bowl, combine the walnuts, grated vegetables, breadcrumbs, chickpea flour, olive oil, soy sauce, garlic powder, onion powder, salt, and pepper.
- Mix well until the mixture holds together. If it’s too dry, add a splash of water.
- Shape the mixture into small meatballs and place them on the prepared baking tray.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Garnish with fresh parsley if desired and serve with a dipping sauce.
