Vegan Walnut and Vegetable Meatballs

- 1 cup walnuts finely chopped
- 1 cup mixed vegetables carrot, zucchini, bell pepper, grated or finely chopped
- 1/2 cup breadcrumbs use gluten-free if needed
- 1/4 cup chickpea flour
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper to taste
- Fresh parsley for garnish optional
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
In a large mixing bowl, combine the walnuts, grated vegetables, breadcrumbs, chickpea flour, olive oil, soy sauce, garlic powder, onion powder, salt, and pepper.
Mix well until the mixture holds together. If it's too dry, add a splash of water.
Shape the mixture into small meatballs and place them on the prepared baking tray.
Bake for 20-25 minutes, or until golden brown and crispy.
Garnish with fresh parsley if desired and serve with a dipping sauce.
