Vegan Walnut and Vegetable Meatballs

Ingredients
  

  • 1 cup walnuts finely chopped
  • 1 cup mixed vegetables carrot, zucchini, bell pepper, grated or finely chopped
  • 1/2 cup breadcrumbs use gluten-free if needed
  • 1/4 cup chickpea flour
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
  • In a large mixing bowl, combine the walnuts, grated vegetables, breadcrumbs, chickpea flour, olive oil, soy sauce, garlic powder, onion powder, salt, and pepper.
  • Mix well until the mixture holds together. If it's too dry, add a splash of water.
  • Shape the mixture into small meatballs and place them on the prepared baking tray.
  • Bake for 20-25 minutes, or until golden brown and crispy.
  • Garnish with fresh parsley if desired and serve with a dipping sauce.
