
Sopa de Tortilla (Tortilla Soup)
A comforting Mexican soup, Sopa de Tortilla is a flavorful blend of a rich tomato-based broth topped with crispy tortilla strips and fresh garnishes.
Ingredients
- 4 cups chicken or vegetable broth
- 4 medium tomatoes chopped
- 1 onion chopped
- 2 garlic cloves minced
- 1 tsp chili powder
- 1 tsp cumin powder
- 2 tbsp vegetable oil
- 4 corn tortillas cut into strips
- 1 avocado sliced
- 1/2 cup sour cream
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat 1 tablespoon of oil in a pan and fry the tortilla strips until crispy. Set aside.
- In the same pan, heat the remaining oil and sauté onions and garlic until fragrant. Add tomatoes, chili powder, and cumin, cooking until the tomatoes are soft.
- Blend the tomato mixture into a smooth puree and return it to the pan. Add the broth, stirring well, and bring to a simmer. Cook for 10 minutes.
- Serve the soup in bowls, topped with crispy tortilla strips, avocado slices, and a dollop of sour cream. Garnish with fresh cilantro and serve with lime wedges on the side.
