Sopa de Tortilla (Tortilla Soup)

A comforting Mexican soup, Sopa de Tortilla is a flavorful blend of a rich tomato-based broth topped with crispy tortilla strips and fresh garnishes.

Ingredients
  

  • 4 cups chicken or vegetable broth
  • 4 medium tomatoes chopped
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 2 tbsp vegetable oil
  • 4 corn tortillas cut into strips
  • 1 avocado sliced
  • 1/2 cup sour cream
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

  • Heat 1 tablespoon of oil in a pan and fry the tortilla strips until crispy. Set aside.
  • In the same pan, heat the remaining oil and sauté onions and garlic until fragrant. Add tomatoes, chili powder, and cumin, cooking until the tomatoes are soft.
  • Blend the tomato mixture into a smooth puree and return it to the pan. Add the broth, stirring well, and bring to a simmer. Cook for 10 minutes.
  • Serve the soup in bowls, topped with crispy tortilla strips, avocado slices, and a dollop of sour cream. Garnish with fresh cilantro and serve with lime wedges on the side.
