Sopa de Tortilla (Tortilla Soup)

- 4 cups chicken or vegetable broth
- 4 medium tomatoes chopped
- 1 onion chopped
- 2 garlic cloves minced
- 1 tsp chili powder
- 1 tsp cumin powder
- 2 tbsp vegetable oil
- 4 corn tortillas cut into strips
- 1 avocado sliced
- 1/2 cup sour cream
- Fresh cilantro for garnish
- Lime wedges for serving
Heat 1 tablespoon of oil in a pan and fry the tortilla strips until crispy. Set aside.
In the same pan, heat the remaining oil and sauté onions and garlic until fragrant. Add tomatoes, chili powder, and cumin, cooking until the tomatoes are soft.
Blend the tomato mixture into a smooth puree and return it to the pan. Add the broth, stirring well, and bring to a simmer. Cook for 10 minutes.
Serve the soup in bowls, topped with crispy tortilla strips, avocado slices, and a dollop of sour cream. Garnish with fresh cilantro and serve with lime wedges on the side.
