Yakitori (Grilled Chicken Skewers)

A popular Japanese street food, Yakitori consists of bite-sized chicken pieces grilled on skewers and glazed with a savory-sweet sauce.

Ingredients
  

  • 500 g chicken thigh or breast cut into bite-sized pieces
  • 8-10 wooden skewers soaked in water for 30 minutes
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 2 tbsp sake
  • 1 tbsp sugar
  • 1 garlic clove minced
  • 1 tsp grated ginger

Instructions
 

  • Mix soy sauce, mirin, sake, sugar, garlic, and ginger in a bowl to make the yakitori sauce. Reserve half the sauce for brushing.
  • Thread the chicken pieces onto skewers, leaving a small gap between each piece.
  • Preheat a grill or grill pan over medium heat. Lightly oil the grates.
  • Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through. Brush the reserved sauce over the skewers during the last few minutes of grilling for a glossy glaze.
  • Serve hot with optional dipping sauce on the side.
