Yakitori (Grilled Chicken Skewers)
A popular Japanese street food, Yakitori consists of bite-sized chicken pieces grilled on skewers and glazed with a savory-sweet sauce.

- 500 g chicken thigh or breast cut into bite-sized pieces
- 8-10 wooden skewers soaked in water for 30 minutes
- 1/4 cup soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 1 tbsp sugar
- 1 garlic clove minced
- 1 tsp grated ginger
Mix soy sauce, mirin, sake, sugar, garlic, and ginger in a bowl to make the yakitori sauce. Reserve half the sauce for brushing.
Thread the chicken pieces onto skewers, leaving a small gap between each piece.
Preheat a grill or grill pan over medium heat. Lightly oil the grates.
Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through. Brush the reserved sauce over the skewers during the last few minutes of grilling for a glossy glaze.
Serve hot with optional dipping sauce on the side.
