
Okonomiyaki (Japanese Savory Pancake)
A flavorful Japanese pancake, Okonomiyaki is made with a cabbage-based batter and topped with a savory sauce, mayonnaise, and bonito flakes.
Ingredients
- 2 cups all-purpose flour
- 1 1/4 cups dashi stock or water
- 4 eggs
- 4 cups shredded cabbage
- 1/2 cup scallions sliced
- 1/2 cup cooked meat or seafood optional, e.g., shrimp or pork belly
- 2 tbsp vegetable oil
For Topping:
- Okonomiyaki sauce
- Mayonnaise
- Bonito flakes
- Nori seaweed powder
Instructions
- In a large bowl, mix flour, dashi stock, and eggs to form a smooth batter. Add cabbage and scallions, mixing well to coat evenly.
- Heat vegetable oil in a large skillet over medium heat. Pour a portion of the batter into the skillet, spreading it into a circle about 1.5 cm thick. Add optional cooked meat or seafood on top.
- Cook for 4-5 minutes on one side until golden brown. Flip carefully and cook for another 4-5 minutes on the other side.
- Transfer to a plate and drizzle with okonomiyaki sauce and mayonnaise. Sprinkle bonito flakes and nori powder on top.
- Repeat with the remaining batter. Serve hot.
