Miso Soup (with Tofu and Wakame)

Ingredients
  

  • 4 cups dashi stock
  • 3 tbsp miso paste white or red
  • 1 cup tofu cubed
  • 2 tbsp dried wakame rehydrated
  • 2 scallions sliced

Instructions
 

  • Heat dashi stock in a pot over medium heat. Bring it to a gentle simmer but do not boil.
  • Dissolve miso paste in a small amount of hot dashi stock in a separate bowl. Gradually return the dissolved miso to the pot.
  • Add tofu cubes and rehydrated wakame to the pot. Simmer for 2-3 minutes to warm the ingredients.
  • Garnish with sliced scallions and serve immediately.
