
Rogan Josh (Spiced Meat Curry)
Rogan Josh is a fragrant and flavorful Indian dish featuring tender pieces of meat cooked in a rich, spiced curry sauce.
Ingredients
- 500 g lamb or beef cubed
- 3 tbsp vegetable oil or ghee
- 2 onions finely chopped
- 3 garlic cloves minced
- 1 tsp ginger grated
- 1 cup yogurt
- 1 cup tomato puree
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 2 tsp Kashmiri chili powder or paprika for milder heat
- 1 tsp garam masala
- 1/2 tsp ground cardamom
- 2 cups water or stock
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil or ghee in a large pot over medium heat. Sauté onions until golden brown. Add garlic and ginger, cooking until fragrant.
- Stir in turmeric, cumin, coriander, chili powder, and garam masala. Cook the spices for 1-2 minutes to release their aroma.
- Add the cubed meat to the pot, stirring well to coat it with the spices. Cook for 5 minutes until browned.
- Mix yogurt and tomato puree into the pot. Stir well and cook for 5 minutes.
- Pour in water or stock. Bring to a simmer, cover, and cook on low heat for 45-60 minutes until the meat is tender.
- Adjust seasoning with salt and sprinkle ground cardamom. Garnish with fresh cilantro and serve hot with naan or basmati rice.
