Rogan Josh (Spiced Meat Curry)

- 500 g lamb or beef cubed
- 3 tbsp vegetable oil or ghee
- 2 onions finely chopped
- 3 garlic cloves minced
- 1 tsp ginger grated
- 1 cup yogurt
- 1 cup tomato puree
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 2 tsp Kashmiri chili powder or paprika for milder heat
- 1 tsp garam masala
- 1/2 tsp ground cardamom
- 2 cups water or stock
- Salt to taste
- Fresh cilantro for garnish
Heat oil or ghee in a large pot over medium heat. Sauté onions until golden brown. Add garlic and ginger, cooking until fragrant.
Stir in turmeric, cumin, coriander, chili powder, and garam masala. Cook the spices for 1-2 minutes to release their aroma.
Add the cubed meat to the pot, stirring well to coat it with the spices. Cook for 5 minutes until browned.
Mix yogurt and tomato puree into the pot. Stir well and cook for 5 minutes.
Pour in water or stock. Bring to a simmer, cover, and cook on low heat for 45-60 minutes until the meat is tender.
Adjust seasoning with salt and sprinkle ground cardamom. Garnish with fresh cilantro and serve hot with naan or basmati rice.
