
Ratatouille (Vegetable Stew)
A classic French dish, Ratatouille is a vibrant and flavorful medley of thinly sliced vegetables cooked with a light tomato sauce.
Ingredients
- 1 zucchini thinly sliced
- 1 eggplant thinly sliced
- 2 tomatoes thinly sliced
- 1 bell pepper thinly sliced
- 1/2 cup tomato sauce
- 2 tbsp olive oil
- 2 garlic cloves minced
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Preheat your oven to 180°C (350°F).
- Spread the tomato sauce evenly at the bottom of a baking dish. Add minced garlic, salt, and black pepper to the sauce.
- Arrange the vegetable slices in an alternating pattern (zucchini, eggplant, tomato, and bell pepper) in a circular or linear pattern in the dish.
- Drizzle olive oil over the vegetables and sprinkle dried thyme, salt, and pepper.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes to lightly caramelize the vegetables.
- Let it cool slightly before serving warm as a side dish or main course.
