Ingredients
  

  • 1 zucchini thinly sliced
  • 1 eggplant thinly sliced
  • 2 tomatoes thinly sliced
  • 1 bell pepper thinly sliced
  • 1/2 cup tomato sauce
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp dried thyme
  • Salt and black pepper to taste

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • Spread the tomato sauce evenly at the bottom of a baking dish. Add minced garlic, salt, and black pepper to the sauce.
  • Arrange the vegetable slices in an alternating pattern (zucchini, eggplant, tomato, and bell pepper) in a circular or linear pattern in the dish.
  • Drizzle olive oil over the vegetables and sprinkle dried thyme, salt, and pepper.
  • Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes to lightly caramelize the vegetables.
  • Let it cool slightly before serving warm as a side dish or main course.
