Ingredients
  

  • 4 cups chicken or vegetable broth
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp chili paste or hot sauce adjust to taste
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup shiitake mushrooms sliced
  • 1/2 cup bamboo shoots sliced
  • 200 g tofu cubed
  • 2 eggs beaten
  • 2 green onions sliced

Instructions
 

  • In a pot, bring the broth to a boil. Stir in soy sauce, rice vinegar, chili paste, and sesame oil.
  • Add mushrooms, bamboo shoots, and tofu to the pot. Simmer for 5 minutes.
  • Gradually stir in the cornstarch mixture and cook until the soup thickens slightly.
  • Slowly pour in the beaten eggs while stirring the soup to create ribbons.
  • Remove from heat, garnish with green onions, and serve hot.
