- 4 cups chicken or vegetable broth
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp chili paste or hot sauce adjust to taste
- 1 tsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water
- 1 cup shiitake mushrooms sliced
- 1/2 cup bamboo shoots sliced
- 200 g tofu cubed
- 2 eggs beaten
- 2 green onions sliced
In a pot, bring the broth to a boil. Stir in soy sauce, rice vinegar, chili paste, and sesame oil.
Add mushrooms, bamboo shoots, and tofu to the pot. Simmer for 5 minutes.
Gradually stir in the cornstarch mixture and cook until the soup thickens slightly.
Slowly pour in the beaten eggs while stirring the soup to create ribbons.
Remove from heat, garnish with green onions, and serve hot.
