Zucchini and Yogurt Mini Börek
Flaky and savory mini börek filled with zucchini and creamy yogurt, perfect for a light snack or appetizer.

For the Filling:
- 1 medium zucchini grated
- 1/2 cup Greek yogurt
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
For the Dough:
- 1 sheet of puff pastry thawed
- 1 egg beaten (for egg wash)
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
In a bowl, mix the grated zucchini, Greek yogurt, olive oil, salt, black pepper, and paprika.
Roll out the puff pastry and cut it into small squares or circles.
Place a spoonful of the zucchini and yogurt mixture in the center of each pastry piece and fold to form small pockets.
Brush the top of each mini börek with beaten egg.
Place the böreks on the prepared baking tray and bake for 15-20 minutes, or until golden and crispy.
Serve warm as a delicious snack or appetizer.
