- 2 cups cranberry beans fresh or dried, pre-soaked
- 1/4 cup olive oil
- 1 onion chopped
- 1 carrot sliced
- 2 medium tomatoes diced
- 1 tbsp tomato paste
- 1 tsp sugar
- 1/2 tsp salt
- 1 cup water
- Fresh parsley for garnish
Heat olive oil in a large pot and sauté onions and carrots until softened.
Add diced tomatoes, tomato paste, and sugar, cooking for 5 minutes.
Stir in the cranberry beans, salt, and water. Cover and simmer over low heat for 30-40 minutes, or until the beans are tender and the sauce has thickened.
Let the dish cool to room temperature, then refrigerate for at least 1 hour before serving. Garnish with fresh parsley.
