Ingredients
  

  • 1 cucumber sliced
  • 1 bell pepper diced
  • 1 carrot julienned
  • 1/2 red onion thinly sliced
  • 1/2 cup plain yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and black pepper to taste
  • Fresh herbs parsley or dill for garnish

Instructions
 

  • In a large bowl, combine the sliced cucumber, diced bell pepper, julienned carrot, and sliced red onion.
  • In a separate small bowl, whisk together the yogurt, Dijon mustard, olive oil, lemon juice, salt, and black pepper until smooth.
  • Pour the dressing over the vegetables and toss to coat evenly.
  • Garnish with fresh herbs and serve immediately.
