- 1 bell pepper diced
- 1 carrot julienned
- 1/2 red onion thinly sliced
- 1/2 cup plain yogurt
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and black pepper to taste
- Fresh herbs parsley or dill for garnish
In a large bowl, combine the sliced cucumber, diced bell pepper, julienned carrot, and sliced red onion.
