Ingredients
6 large eggs
1 red bell pepper (finely chopped)
1 green bell pepper (finely chopped)
1 small onion (finely chopped)
100 g mushrooms (sliced)
Salt and pepper (to taste)
2 tablespoons olive oil or butter
Instructions
Heat oil in a pan, add the chopped onion, peppers, and mushrooms. Sauté for 5 minutes over medium heat.
In a bowl, whisk the eggs and add salt and pepper.
Pour the egg mixture over the vegetables and cook for 5 minutes, covering the pan until the edges are set.
Slice and serve warm.
