Tuna Melt with Aged Cheddar

- 8 slices whole grain bread
- 2 cans tuna drained
- 1/4 cup light mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 4 slices aged cheddar cheese
- 2 tablespoons butter for toasting bread
In a bowl, mix the tuna with mayonnaise, Dijon mustard, lemon juice, salt, and black pepper to make a creamy salad.
Spread the tuna salad evenly on four slices of bread.
Top each with a slice of aged cheddar cheese and close the sandwiches with the remaining slices of bread.
Heat a skillet and melt the butter. Grill the sandwiches in the skillet for about 3-4 minutes on each side until golden brown and crispy.
