Tuna Melt with Aged Cheddar

Ingredients
  

  • 8 slices whole grain bread
  • 2 cans tuna drained
  • 1/4 cup light mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 slices aged cheddar cheese
  • 2 tablespoons butter for toasting bread

Instructions
 

  • In a bowl, mix the tuna with mayonnaise, Dijon mustard, lemon juice, salt, and black pepper to make a creamy salad.
  • Spread the tuna salad evenly on four slices of bread.
  • Top each with a slice of aged cheddar cheese and close the sandwiches with the remaining slices of bread.
  • Heat a skillet and melt the butter. Grill the sandwiches in the skillet for about 3-4 minutes on each side until golden brown and crispy.
  • Serve hot.
