- 500 g pork shoulder thinly sliced
- 8 small corn tortillas
- 1 cup pineapple chunks
- 1/2 cup chopped cilantro
- 1/2 cup diced onion
- 2 tbsp vegetable oil
For the Marinade:
- 3 dried guajillo chilies seeded and soaked
- 1/4 cup orange juice
- 2 tbsp white vinegar
- 2 garlic cloves
- 1 tsp cumin powder
- 1 tsp oregano
- 1/2 tsp paprika
- Salt to taste
Blend guajillo chilies, orange juice, vinegar, garlic, cumin, oregano, paprika, and salt into a smooth marinade. Coat the pork slices thoroughly with the marinade and refrigerate for at least 2 hours, preferably overnight.
Heat oil in a large skillet or grill pan over medium-high heat. Cook the marinated pork slices until browned and cooked through, about 3-4 minutes per side. Let rest for 5 minutes, then slice into thin strips.
Warm the tortillas on a skillet. Fill each tortilla with pork slices, pineapple chunks, cilantro, and diced onions. Serve hot with lime wedges and salsa on the side.
