Tacos al Pastor (Marinated Pork Tacos)

Tacos al Pastor is a flavorful Mexican dish featuring marinated pork served in soft tortillas, topped with pineapple, cilantro, and onions for a perfect balance of savory and sweet.

Ingredients
  

  • 500 g pork shoulder thinly sliced
  • 8 small corn tortillas
  • 1 cup pineapple chunks
  • 1/2 cup chopped cilantro
  • 1/2 cup diced onion
  • 2 tbsp vegetable oil

For the Marinade:

  • 3 dried guajillo chilies seeded and soaked
  • 1/4 cup orange juice
  • 2 tbsp white vinegar
  • 2 garlic cloves
  • 1 tsp cumin powder
  • 1 tsp oregano
  • 1/2 tsp paprika
  • Salt to taste

Instructions
 

  • Blend guajillo chilies, orange juice, vinegar, garlic, cumin, oregano, paprika, and salt into a smooth marinade. Coat the pork slices thoroughly with the marinade and refrigerate for at least 2 hours, preferably overnight.
  • Heat oil in a large skillet or grill pan over medium-high heat. Cook the marinated pork slices until browned and cooked through, about 3-4 minutes per side. Let rest for 5 minutes, then slice into thin strips.
  • Warm the tortillas on a skillet. Fill each tortilla with pork slices, pineapple chunks, cilantro, and diced onions. Serve hot with lime wedges and salsa on the side.
