Superfood Broccoli and Cranberry Salad

- 3 cups raw broccoli florets small pieces
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts toasted
- 1/4 cup pumpkin seeds
- 1/4 cup diced red onion
- 1/2 cup shredded carrots
For the Dressing
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup for a vegan option
- 1 teaspoon Dijon mustard
- Salt and black pepper
Chop the broccoli into small florets and place them in a large salad bowl.
Add the dried cranberries, toasted walnuts, pumpkin seeds, diced red onion, and shredded carrots.
For the dressing, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper in a small bowl.
Drizzle the dressing over the salad and toss well to combine all the ingredients.
