Ingredients
  

  • 1/2 cup sun-dried tomatoes chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley chopped (optional)

Instructions
 

  • In a mixing bowl, combine the sun-dried tomatoes, olive oil, lemon juice, minced garlic, salt, and black pepper.
  • Stir well until everything is well mixed and the tomatoes are coated with the oil and seasoning.
  • Taste and adjust the seasoning if needed.
  • Garnish with fresh parsley if desired.
  • Serve immediately with pita bread, crackers, or as a topping for salads.
