Sugar-Free Vanilla and Cocoa Granola

A healthy, crunchy granola made with vanilla and cocoa, perfect for breakfast or a snack, without any added sugar.

Ingredients
  

  • 2 cups rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup almond butter or peanut butter
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/4 cup chopped almonds or walnuts
  • 1/4 cup unsweetened shredded coconut optional
  • 1-2 tbsp erythritol or stevia optional, for sweetness
  • A pinch of salt

Instructions
 

  • Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  • In a large bowl, mix the oats, cocoa powder, and salt.
  • In a separate bowl, combine the almond butter, coconut oil, vanilla extract, and sweetener (if using).
  • Pour the wet ingredients into the dry ingredients and stir until everything is evenly coated.
  • Spread the mixture in an even layer on the prepared baking sheet.
  • Bake for 20-25 minutes, stirring once halfway through, until golden brown and crispy.
  • Remove from the oven and let it cool completely before serving.
