halved lengthwise and scooped out

fresh spinach
finely chopped

feta cheese
crumbled

garlic clove
grated

olive oil

dried oregano
Salt and black pepper
For topping: Grated mozzarella cheese

Instructions
Preheat the oven to 200°C (400°F).
Scoop out the insides of the zucchinis with a spoon, leaving the outer shell intact.
Heat olive oil in a skillet. Add the chopped spinach and grated garlic, and sauté for 2-3 minutes.
Transfer the sautéed spinach to a bowl. Mix in the feta cheese, oregano, salt, and black pepper.
Stuff the zucchini halves with the mixture and place them on a baking tray.
Optionally, sprinkle with grated mozzarella cheese.
Bake for 20-25 minutes, until the zucchinis are tender and the tops are golden brown.
Serve hot.
