Spinach and Feta Stuffed Zucchini Boats

Light and delicious zucchini boats filled with fresh spinach and creamy feta cheese.

Ingredients
  

  • 4 zucchinis halved lengthwise and scooped out
  • 2 cups fresh spinach finely chopped
  • 1 cup feta cheese crumbled
  • 1 garlic clove grated
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper
  • For topping: Grated mozzarella cheese optional

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Scoop out the insides of the zucchinis with a spoon, leaving the outer shell intact.
  • Heat olive oil in a skillet. Add the chopped spinach and grated garlic, and sauté for 2-3 minutes.
  • Transfer the sautéed spinach to a bowl. Mix in the feta cheese, oregano, salt, and black pepper.
  • Stuff the zucchini halves with the mixture and place them on a baking tray.
  • Optionally, sprinkle with grated mozzarella cheese.
  • Bake for 20-25 minutes, until the zucchinis are tender and the tops are golden brown.
  • Serve hot.
