Ingredients
  

  • 2 large ripe tomatoes finely chopped
  • 1/2 red bell pepper finely chopped
  • 1/2 cucumber finely chopped
  • 1 small onion finely chopped
  • 1-2 green chilies finely chopped (adjust to taste)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp red pepper flakes
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • In a mixing bowl, combine the tomatoes, red bell pepper, cucumber, onion, and green chilies.
  • Add the olive oil, lemon juice, red pepper flakes, cumin, paprika, salt, and black pepper.
  • Mix well until all ingredients are combined.
  • Garnish with fresh parsley and drizzle with extra olive oil if desired.
  • Serve immediately or refrigerate for 15-20 minutes to allow the flavors to meld.
