- 2 large ripe tomatoes finely chopped
- 1/2 red bell pepper finely chopped
- 1/2 cucumber finely chopped
- 1 small onion finely chopped
- 1-2 green chilies finely chopped (adjust to taste)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp red pepper flakes
- 1/2 tsp cumin
- 1/4 tsp paprika
- Salt and black pepper to taste
- Fresh parsley for garnish
In a mixing bowl, combine the tomatoes, red bell pepper, cucumber, onion, and green chilies.
Add the olive oil, lemon juice, red pepper flakes, cumin, paprika, salt, and black pepper.
Mix well until all ingredients are combined.
Garnish with fresh parsley and drizzle with extra olive oil if desired.
Serve immediately or refrigerate for 15-20 minutes to allow the flavors to meld.
