Soba Noodles (Cold or Hot Soba)

A versatile Japanese noodle dish, Soba can be served cold with a dipping sauce or hot in a flavorful broth.

Ingredients
  

  • 400 g soba noodles
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 1 tsp sugar
  • 2 cups dashi stock for hot soba or 1 cup cold water (for dipping sauce)
  • Optional toppings: scallions sesame seeds, nori strips, tempura, or soft-boiled egg

Instructions
 

  • Cook soba noodles in boiling water according to package instructions, usually about 4-5 minutes. Drain and rinse under cold running water to stop cooking. Set aside.
  • For cold soba, mix soy sauce, mirin, sugar, and cold water in a bowl to make the dipping sauce. Serve the noodles chilled alongside the dipping sauce and garnish with scallions and sesame seeds.
  • For hot soba, heat dashi stock in a pot and mix in soy sauce, mirin, and sugar. Add the cooked noodles to the broth, and serve hot with toppings like scallions, nori, and tempura.
